With the arrival of March comes the epidemic of shamrock-themed desserts and treats. Here are some easy, classic recipes to fulfill your St. Patty’s day cravings.

St. Patrick’s Day Pancakes (Serves 4):

For the pancakes, either use the recipe below, your own personal recipe, or pancake mix and just add green food coloring!

Ingredients:

1 cup flour

2 tablespoons of sugar

2 teaspoons of baking soda

½ teaspoon salt

1 cup whole milk

2 tablespoons of vegetable oil

1 egg

4-5 drops of green food coloring

Nonstick spray

Whipped Cream (optional)

Chocolate sauce (optional)

Directions:

  1. Preheat griddle to 350 degrees F.
  2. In a medium-size bowl, sift together the flour, sugar, baking soda, and salt.
  3. In a separate, large bowl, whisk the milk, vegetable oil, egg and food coloring.
  4. Once mixed, add the flour mixture and stir until combined.
  5. When batter is combined, spray the griddle with the nonstick spray and cook on griddle until bubbles appear, then flip it.
  6. Top it with whipped cream and chocolate sauce or any toppings of your choice.

Shamrock Shake (currently being served at McDonald’s; serves 1-2):

Ingredients:

2 cups of vanilla ice cream

⅓ cup milk

½ tsp of peppermint extract

6 drops of green food coloring

Whipped cream (optional)

Green/crystal/shamrock sprinkles (optional)

Directions:

  1. In a blender, blend the ice cream, milk, peppermint extract, and food coloring until smooth texture.
  2. Pour shake into a cup.
  3. Add whipped cream, sprinkles, or any sort of topping you would like.

Irish Trifle (Serves 2):

Ingredients:

1 sour cream pound cake with 3 colors: orange, white, and green

3 cups of vanilla pudding with 3 colors: orange, white, and green

1 cup buttercream frosting

½ cup sliced, patted dry kiwis

½ cup sliced, patted dry grapes

1 sliced orange, patted dry

Directions:

  1. Prepare cake batter. Divide into 3 different bowls. Leave one bowl as is, and dye the other two bowls orange and green.
  2. Bake the cakes. Allow them to cool, then break/slice them up into pieces.
  3. Slice the oranges, grapes, and kiwis into fairly small pieces.
  4. Color your puddings orange, white, and green.
  5. Start layering into a cup or mug. I recommend putting the cake first, pudding second, and the fruit on top.
  6. Use a decorating tip and swirl the frosting on top and enjoy.

  Whether it’s breakfast, dessert, or a quick snack, these Shamrock recipes are sure to make your St. Patrick’s Day bright.
